Some of my favorites from the stock maps that I can think of:
DM-Deimos
DM-Carbon Fire
DM-Darkmatch
DM-OceanRelic
CTF Sentinel(? one with the big figures in the tubes)
VCTF-Sandstorm
And of user maps:
DM-Restrict
DM-MCC Hanger
DM-Orbital Decay
DM-Babylon night
DM-Garden of Dreams
DM-Cydian
DM-Suraj
DM-Hong Kong
Remus maps like Gray Matter and Derelict
DM-Nowhere
Hyperblast3 (I think there's only one remake of this)
CTF-Thermostate
CTF-Facing Worlds 3
There's others but I can't remember the names right now.

Hey, yeah MCC-Hanger's one of my all time favorites, seems like it could have been a stock map to show off what the engine can do. I love all the little details you have going on. It's like a HOLP map in set-up where it's fun to play and a good mix of areas and flow and basic gameplay design, but with a million details added onto that base. And yet, for me (and I have a decent PC) it still runs great without any slowdowns. Only Orbital Decay has as much detail, I think, for a future type map, and that one occasionally slows a bit.
Love it, especially the moving ships that go into the wormhole and the floating bubble/water tube room. Death Fan's also a lot of fun. You need to do another big scope type map, man!

Nice to see people do appreciate them still.
There are so many maps that I love for either their gameplay, their visuals, a unique style or ones that are just inspiring or a mix of all. Ive been through many gigabytes of custom maps for UT3, some i've kept others I havent. But all have helped me notice things for my own.
If I had to list ones that Ive kept for playing, they would be:
DM-Bonescraper
DM-1on1-Penetrated
DM-Acqusition
DM-Echelon
DM-Ith
DM-Subterrane
DM-Eluded
DM-Gritt
DM-Glacial
CTF-Hosh2
CTF-Tangled
CTF-Cardinal (This map, and Sjosz are awesome. And made me the BSP addict I am.)
CTF-Lime
CTF-Razor
CTF-Turbo
Some of these maps have timeless layouts, I realise most are HOLP. But I always prefer a solid layout over solid visuals. However both make a map even better.
I dont play vCTF anymore. And the only time I really play warfare is on pickups, where the most played custom is WAR-Flux :P

What I like about UT3 is that the game has a wide selection of very solid maps. However, this makes selecting my favorite ones quite difficult, if you'd ask me about my favorite UT or UT2 maps, the list would be much smaller and much more defined. Well, I mostly play DM/TDM, so the list of DM maps is the longest one. I'm more picky when it comes to CTF, though I have to mention that I like playing Greed and while some of the CTF maps are really fun in Greed, they could be bad in CTF, dunno. About Warfare, some maps like Avalanche, Downtown or Floodgate are so heavily overplayed, that I just can't see them anymore. But this doesn't mean that they're actually bad. And sometimes I enjoy gimmicky maps like OceanRelic oder Radiant. Of course stuff like Spidermines would be aweful for competitive play, but this doesn't mean those maps can't be fun.

Mine are probably Downtown for <16 people, Serenity for 10-20 people, and Dusk Free Mine for a full server. Power surge is great to as long as the majority of the server actually knows where to go.

The best maps are the ones made by the community I'd say. We've got some f*cking amazing mappers, I mean look at people like Angel He@rt (although I think he only mapped for UT2004).
I like all the urban levels, and the oriental themed ones. The afghanistan/Iraq style (or necris, if you like lol) maps are okay, but kinda dull. The levels set in space enviroments are cool. Basically anything with HIGH attention to detail, and dreamlike landscapes, which accounts for a lot of the maps I guess haha.
Edit: Lol CTF has died? Not on PS3 it hasn't. You only get around 7-8 CTF servers these days, but thats plenty enough.
