UT3 already has pretty **** good music. I usually just listen to that. Sometimes I even listen to that while playing CoD4 :P

In UT2004 I always used a selection of the ingame music.
For UT3 I usually listen to Ayreon, Muse or the Arctic Monkeys.
Especially the "Universal Migrator"- and "01011001"-albums from Ayreon are great
background music for playing a game of DM or vCTF
