I can't remember anything specific from the old games but I always enjoyed getting headshots (or any kills, really) with the Razorjack/Ripper.
In 2k4 I remember my first shock combo on a Manta in Torlan. Killing vehicles with combos was so much fun. I'd go to Torlan's center node and inevitably there'd be an enemy Manta coming down the canyon thinking they'd run me over (especially since I usually just stood still). A quick combo placed just above the cockpit would kill them and sometimes leave their Manta intact for me to hijack.
UT3 is so much fun. Just last night I was playing WAR-Floodgate and was on the roof of the center node building (ejected from my Viper) -- we just built the node and I was going to pick off some incoming vehicles with my AVRIL. I saw the "enemy node carrier nearby" and realized he was coming down the corridor leading to the node. For grunts and giggles I fired an AVRIL down towards the node as that was my only option to save it -- I hear "DENIED!" and he types, "wow, longbow? ns". Pure luck but still memorable.
