This is already partially in the game, there's an Arena mutator that is set up to take a variable (a choice of weapon) so that you'd play with only that weapon and unlimited ammo for it.
They haven't coded a configuration screen for it however, the weapon is set in one of the .ini files.
Open UTGame.ini and search for [UTGame.UTMutator_Arena] and you'll find ArenaWeaponClassPath=UTGame.UTWeap_ShockRifle which you can alter in order to change the weapon (means a game restart if you want to change the weapon, but it's better than nothing).
Not sure how to get the Arena mutator in the mutator list though, it just appeared for me.Comment
