    Mortal Kombat is made using licensed Unreal 3, and not UDK. their setup isn't something you'll easily reproduce in UDK, but it can be done by taking a look at hit masks and learning your way around the material editor.

                Probably the only sensible way of doing it is modeling the insides as a part of the same object with a separate material (you can do it all in one material for better performance, but that should take an unnecessary amount of artist manhours). When you want to show the inner mesh, you just need to adjust the outer mesh's transparency (maybe have some other shader effect like glow green and have a fresnel or something).

                You should be able to just use a single animation skeleton... and thus only need to animate once.

                Now depending, of course, on what you're SPECIFICALLY doing... you might be able to get away with a hack like a plane effect or something.
