    1: I forget the name of it, but in the editor with the default stuff somewhere, there is a material that comes with UDK that is shallow water running over wooden planks. It looks pretty good. It's all done in the same material. If you can't find it, I'll see if I can dig it up again.

    2: That's controlled by the physics asset. You can assign a default physics asset in the material itself, and you can override that default in your mesh. You'll want to create your own Water physics asset. It'll have slots to assign different particle effects when collisions happen or from sliding, etc.
