    Default Within UDK, can you tweak different animations?

    I'd imagine that i'd be hard to make a weapon animation make up perfectly with a skeletal mesh, and so, would it be possible to tweak the animation somehow?

    No, you can only activate and blend existing animations together.

    Usually when you setup animations you test the meshes within your animation program to see issues like that.
