I have googled this but I never could find a fix for it and I thought I will ask people on here. Why the hell is my DX11 doing this?
I believe everything is right and I got DX11 Flat/Triangle tessellation on but it flips out. This is why I never bothered with DX11 because this crap happens.

afaik DX11 has always been buggy, but anyway which version of UDK are you using ? also have you updated your drivers ? and could you post a log when this happens perhaps it should show a warning there
Thank you I reinstalled my Nvidia drivers and downloaded the new UDK and it works fine now.
