What if you mastered and then sell an an item that isn't sold in the store, like the map items and the NG-exclusive items? Can you buy them back from the store?

I believe you can, as other locked items stay unlocked even after you sell them (unless you enter a new NG)

you can, I sold my CM Fusion Helmet in OG and was able to buy it back (to go with my Omega Armor or course)

Thanks EIPared. You reminded me of the first question I ever asked on this forum (it's also my very first post in this forum): how do you spare Torren and get Torren's Legacy? Clicking the blue circle appearing on his left hand or the blue circle on Siris's weapon?
