Reconnaissance, Meatshop, and Just In Time can be done offline. You just need a 2nd controller.

Reconnaissance - just have the friendly fire or purchase a frag and kill yourself. Spot the weapon you had and have the 2nd controller pick up the weapon. Then spot the weapon that it dropped and repeat till you get the ribbon.
