A quick defense of OG in general: It's nice that we get that OG slot because it's the only way we can have a standardized and fair way of comparing our relative progress in god-king climbs and also to have a concrete sense of how difficult each batch of boss fights are going to be for any GK level. Getting to NG^3,000 and beyond is certainly a challenge in itself, but a very different kind of challenge because it's hard to measure relative difficulty in light of level inflation.
I am on rebirth 71 and have mediocre attack gems, but since I am level 81, I am capped with only 372 base stat points to spend. In this experiment, I traded 18,600 base HP (health points) for 372 base attack.
Before the change:
HP: 18,650 + 5,000 = 23,650
Attack with Reaper: 1 + 1700 = 1701
Attack with Gelder: 1 + 707 = 708
After the change:
HP: 50 + 5,000 = 5,050
Attack with Reaper: 373 + 1700 = 2073
Attack with Gelder: 373 + 707 = 1080
New gameplay experience: I can hardly sense the fact that I have more attack, yet playing against a plated guard I died the first time I got kicked in the head. If I was to keep these stats then I would have to restart battles MUCH more often.

Conclusion: +373 attack is the most that anyone can get in OG from base stats. Considering that each base stat point gives 50 more HP while each point only gives 1 attack, then there is little need to put anything into attack at all. This is especially true since HP gems cap at 50 while attack and magic cap at 200. That means that until OG becomes so difficult that you cannot survive a hit no matter how much HP+ you have, then the opportunity cost of HP, whether in base stats or gems, is not worth it. The driving point of this conclusion is that in OG, the amount of attack stats that can be received from gems overshadows that which can be gained from base stats–this is far from the case with with HP.
Still, in NG+++s, those +1 attack increments eventually add up to thousands and suddenly overshadow the need for HP once you become very skilled at evasion. This point was also evident in IB1 where negative bloodlines were optimal with about 90% attack and 10% HP. The same was true for high NGs.
As a side note, you can see that heavy weapons are not universally overrated and have their niches in OG and early NGs (which have the added benefit of the Anarchax).
