    Default I'm a n00b, how should I start?

    I've got no experience, no portfolio. I got a good level of knowledge on Unreal Engine 3.

    What would be the more appropriate way to start?

    -UT3 modding

    or

    -UDK project

    (Any help would be greatly appreciated.)

    I never really understand why people ask this sort of question. You are the one who should best understand your own goals. Furthermore this isn't even the right section for your question.

    If your only goals are for fun you might be best off using UT3, as there is a breadth of info and content out there to help you start your project. But you will not get access to all the cool new tech. It's easy to convert later, but that's an extra step. Modding an existing game is often a good way of demonstrating your abilities, but then again building your own full game is obviously just as good or better.

    The bottom line is you should get experience and a portfolio built up, as you say, so that you can prove you are able to do the work and not just say "I'm making an MMO" but have nothing to show people why they should care (as seems to be the trend here)

    Going to UDK.com, clicking "Documentation" at the top, then clicking "Getting Started" should be able to help you with, well, getting started. If that page isn't enough to send you in the right direction, then you need to start a little smaller than UDK.

    What everybody, in my opinion, will tell you to do is to learn a popular programming language, and build a few games with hobby libraries, like PyGame, Allegro, etc. This, though, is in a programmers perspective, so I don't speak for a world builders sake...

    But regardless, familiarizing yourself in basic programming concepts, especially OOP, will save you enormous amounts of time in many aspects.

    I suggest jumping into the UDK Pool with soom waders on. That way you get wet behind the ears w/o drowning yourself. d/ling and installing the UDK is your 1st step obviously, then opening the editor and following some of the simpler aspects 1st should be your 1st step on the path of kowledge and fun.
