I know there is a switch -multihome <ip> but is it possible to bind it to several IP's simultaniously?
We have 5 IP's on the serverpc, is it possible to bind UT3 to all of them on port 7777? So you can use any of the ip's to join the server?

The default is to bind to 0.0.0.0 which means "all interfaces" so it does the right thing unless you specifically tell it to do otherwise. To answer your question specifically: no, there is no way (as far as I know) to bind to a select subset of the machines interfaces, it's all of them or one of them.
