My resolution changed as soon as I started up Bulletstorm, permanently and for the whole/core console (meaning that my Dashboard, NetFlix and other games are also subject to this 'new' resolution/display). Moments before I started up Bulletstorm the resolution was perfect and the same as it has been for two+ years. When the Bulletstorm menu popped up I noticed that it was stretched off the edge of the screen. The in-game options didn't offer anything for resolution, so I went back to my dashboard. Lo and behold, the dashboard was stretched beyond the edge of the screen. I checked my TV settings and the other consoles (PS3 and Wii), but they were all normal and perfectly fine.
I fiddled with all the xbox display settings and only managed to get the resolution/display to something that was close to decent but was still stretched. I was on the phone with xbox support for thirty minutes trying to correct the resolution/display but to no avail. It's HDMI connected and 1080p. I tried other cables and every setting combination imaginable.
