I'm looking to build a new rig since my current one is on its last legs... So, I'm trying to keep my budget down to $2500. I'm looking at:

2.66 Intel Core Duo

4 GB of Crucial Ballistix Tracer DDR2 RAM

Gigabyte P35 DS4 rev2 motherboard

Cosair 650w PSU

Windows Vista Ultimate OS

Now comes the hard part given that the 8800 GT's are constantly out of stock should I get one 8800 GTX 768 card, two 8800 (either GT or GTS) in SLI
or a single 8800 GT card?

I want to get at least 60 fps at 1024 x 768...

Thoughts? Thanks....

You leave many important details out.
E6750 C2D or Q6600 are the best choices for overclocking value
If you buy an OS get 64 bit vista
wait for the 8800GT 512Mb to get back in stock
easy 60fps at 1600x1200 with that setup
here is a nice long article about good hardware choices;
