I can't add the following pickups to my level or a new level with a 256 cube:
AssaultAmmoPickup
BioAmmoPickup
FlakAmmoPickup
LinkAmmoPickup
MinigunAmmoPickup
RocketAmmoPickup
I can add the following however:
ClassicSniperAmmoPickup
ONSAVRiLAmmoPickup
ONSGrenadeAmmoPickup
ONSMineAmmoPickup
ShockAmmoPickup
SniperAmmoPickup
I was able to change an ammo pickup that worked into one that didn't work but it will say what kind of ammo the pickup was originally when I pick it up. I even changed the PickupMessage and that didn't work.

Nevermind, I figured it out. I have to turn the grid off and they will place. How odd. Anyone know why this happens?

I've found that sometimes ammo doesn't want to be placed from any of the orthogonal viewports. The perspective viewport seems much more reliable.
Also, sometimes trying to place the pickup, via an orthogonal viewport, will work when placed in an open area of the map, but not in one that's more cramped.
I've also had pickups not showing up in side and front viewports, while being visible in top and persp ports. The editor has its quirks.

True, adding pickups, lights, and start locations is easier in the 3D view because you can see the floor where you are adding it.

Also watch your map's Z altitude.
Many pickups won't display properly in the TFS views if they are sufficiently below the map's "0" Z line.
In other words, if your map floors/terrain are at -10,000, many of the pickups won't always display properly in [T][F][S].

OR to make it really simple, make sure your in between the big blue and red line.

As to the grid itself, just turn it down & they will place just fine.
Many actors, like pickups, CTF Flags, path nodes etc.. won't place if the grid size is too big, try something like 64 or 32.
Personally I often snap them to the grid (Advanced>bEdShouldSnap=True) to make sure stuff like ammo, flags & paths are aligned nicely, helps quite a lot sometimes. :)

Oh yeah, definitely snap everything. Always.
My lights, apples, pickups, ... all snapped to place. What can I say, I like my precision.
